Interestingly though, their meals cost three times as much per meal as those at Pennine, but the Pennine wastage rate is only slightly higher.

So, who is wasting more money? South Manchester for paying over the odds for its meals, but having slightly less wastage, or Pennine, by having better control over food costs, but slightly higher wastage? You decide, but it would be interesting to know who provides the catering at these hospitals, private sector or in-house?
