The nurses walked out last week over proposals to let social workers take on some of their duties at Manchester Mental Health and Social Care Trust.
Public sector union Unison said the reorganisation would mean fewer nurse and occupational therapy posts, closure of elderly care homes, increased workloads and fewer resources.
More than 250 staff will strike after 91.6% of members voted for action.
The Manchester Royal Infirmary and Chorlton House in Chorlton will be picketed from 9am.
