Aiden Byrne, the head chef at the Dorchester's Grill restaurant, is leaving to run the Church Green in Lymm.
The Liverpool-born chef who, at 22, became the youngest ever recipient of a Michelin star - has obtained the leasehold of the pub on Higher Lane.
He joined the Dorchester in 2006 and will leave at the end of January.
Mr Byrne, 35, said: "When I first joined the Dorchester, I said I'd be there for three years, tops. This pub became available in Lymm, and I got it for an absolute steal. It was too good an opportunity to miss - the chance to run my own restaurant. The Dorchester has been really good to me, but this opportunity came along and I decided to grab it."
Byrne said his main priority would be to get the business up and running and to get the food to the standard he wanted. The food will be British, but `simpler' than the Dorchester fare, he said. He intends to keep running the pub's restaurant, as well as the nine bedrooms above as a guest house, and aims to increase the quality of the food, which will focus on locally-sourced, seasonal produce.
Meanwhile, another pub changing hands is the Sportsman's Arms in Penketh, Warrington, where former army medic Joe Dodd and his wife Adrienne have taken up the reins, with backing from NatWest Business Banking.
